Wilson officially opened its doors on Thursday May 24th 2007 in the heart of the International Square in Old Montreal. Wilson has rapidly become an address to remember for those who are in search of a trendy yet classy spot to indulge in the creations of the kitchen’s market cuisine and the very best in grilled Angus meats and seafood.
Always finding ways to please their clientele, Wilson announced in August 2008 that International Chef David Adjey will be joining their staff as of September 2008. Following the trends in New York, L.A., Las Vegas, this will mark the first time in Montreal’s history that an international chef of such acclaim will be implicated in a project of this allure and along with Executive Chef Nacim Laouli, they plan on reinventing market cuisine to a whole new level.

David Adjey will be unveiling a new menu at Wilson each season (fall/winter/spring/summer) with inspirations of modern-day cuisine alongside their specialties in grilled Angus meats and seafood. As of September 2008, you will have the opportunity to meet him and experience his cuisine.
